What's for Dinner, Tues., Feb. 4, 2020

I'm making a recipe from my Union Square Cafe Cookbook. It's called "Artichoke-Eggplant Hash." Of course, it has potatoes in it, but also tomatoes, along with the ingredients in the recipe name. Garlic, thyme and parsley.

do you put poached eggs on top like it is done with corned beef hash?

2. Chicken

Roasted legs and thighs, basted and crisped-up.

Sliced red potatoes roasted with fennel, onions and herbs & spices. Steamed vegetable medley of carrots, celery, cauliflower, broccoli with raw radishes on the side.

90% Cocoa chocolate with a drop of vanilla ice cream for dessert.

Scotch (neat) for the speech.

3. Chicken Chow Mein

4. Marinated baked salmon

Oven roasted potatoes

tossed salad for the guys

Zoodles (zucchini noodles) for me

A glass of Chardonnay for me

Skinny Cows for the guys

5. Beef barley soup with bread. A brownie for dessert.

Will not be watching speech. Will watch
an episode of Howard’s End on PBS (recorded). I will rely on DU to tell me about the speech.

6. pasta

we're starting w/ a garden salad w/ Italian dressing

the pasta is Farfalle in a creamy pesto sauce, w/ ground turkey sausage, mushrooms, red bell pepper, onions and garlic.

I think there may be some oatmeal cookies around here if I'm looking for dessert.
