What's for Dinner, Wed., Feb. 12, 2020

Yellowfin tuna with kimchi sauce. Shrimp, too. Seasonings include sesame oil, gochugaru (Korean chili pepper), spring onions, garlic, ginger, and toasted sesame seed. The RG made up the sauce on his own.

Tossed green salad.

Vegetables: steamed cauliflower and broccoli over cheese patties. The cheese patties come from the Portuguese store. I'm not sure that's what they call them, but that's how I think of them.

Dessert: vanilla ice cream over raspberries. Dark chocolate to go with it.

The flu has knocked me and my kid on our arses. We both had our shots in November, but this flu bug ain't messin around!

Try adding potatoes at the end when you cook the beans.

My family loves Pinto beans, ham, and potatoes served with

homemade cornbread, sliced tomatoes, and onions.

We are all cheese freaks so we add cheddar cheese to everything.

Cheddar cheese and pinto beans are an excellent combo.

with homemade Red Salsa (muy picante) and rationed tortilla chips for scooping --
Lettuce, tomato, red onion, shredded cheese mix...simply satisfying (IMHO).
Unsweetened Iced Tea.

6. Baby Back Ribs

Ribs are slow cooking at 275 in the oven with a dry rub of salt, pepper, garlic powder, and paprika. Tomato based BBQ sauce will be applied later to finish at a higher temperature.

Butternut squash are also in the oven. I've never baked them at this low a temperature, but the internet says this temperature is fine and that they will not darken and will taste better.

FLFC has some hamburger chunks which seem to have replaced ham as his present favorite. I'm certain he will sample some rib meat.
