What's for Dinner, Fri., Feb. 14, 2020

For Valentine's day, we are making a a dish that takes us both back in time, to the earliest days of our relationship. It's based on this recipe for eggplant-almond enchiladas. I first made them for the RG from my Mollie Katzen cookbook. Subsequently he developed a few creative twists (one of which is to add ground pork--Mollie would shriek in horror). For tortillas, we are using ancient grains flax-oat wraps.

To go with, spinach-bacon-hard boiled egg salad.

Also sliced pears and French cheese.

For dessert, fresh raspberries and chocolate.
