I'm posting this recipe because we have tested it in my household. My niece is in her 8th month pregnancy during which she developed gestational diabetes. My sister made the cookies for her a couple of weeks ago and she gave them double plus extra good ratings. Taste, texture, and satisfaction are all there.

(3,276 posts)I don't need gluten-free but have seen almond flour in the supermarket and would like to try it. Those cookies look easy and delicious. Plus it's a small-enough yield that I won't overdo it.
