Half-Box Cakes

Half Box Cakes

Ingredients:
1 3/4 cups cake mix (half of a 15.25 to 18 oz box)
2/3 cup water (or milk or fruit juice)
1/4 cup oil
1 egg

Instructions:
Preheat oven to 350 degrees
Spray an 8" inch square or round cake pan
Combine the cake mix, water, oil, and egg
Mix well
Beat for 1 minute at medium speed
Pour the cake batter into the prepared pan
Bake for 25 to 35 minutes
Let cake cool completely on a wire rack
Frost or dust with powdered sugar

the ones where you mix any flavor cake mix with an angel food cake mix. Hits the sweet tooth ok, but we wind up eating it too often.
I'm hoping an 8 x 8 snack cake will work a little better calorie-wise.

We've been wanting a chocolate cake, and I have a box ready to, but I don't want to make a big cake just for two. There is no room in the freezer. Of course we'd try to eat the whole damn thing... It's chocolate., you know, and cake, too, so who could resist?

These instructions will solve the problem, and gives us two chocolate cakes. I want to make the first one today, a two layer half cake with chocolate butter creme frosting. Then just a one layer square cake with vanilla butter creme topped with toasted coconut and mini chocolate drops
