I have some chicken stock, snap peas in the fridge, so maybe I'll go that route - shrimp, scallion soup, stir fried peas with rice.

Looking forward to it.
Also today making whole wheat banana bread, coconut homestead cookies and some applesauce from frozen farmers market apples.
Smells pretty good 'round here! Beautiful day today.

i just got home from work, had a long day today. payday isn't until monday, so i'm going to have to make due with what we've got. there's plenty of beans, tomato products and rice in the cupboards, i've got a couple onions and a bell pepper, so it's more a matter of figuring out what is going to take the least amount of effort.
what's for eating at your place?
so here's what i came up with: i'm going to broil some of the pre-prepared polenta i've got in the cupboard and top it with a chunky sauce of fresh cherry tomatoes, canned diced tomatoes and onion. i've got a wee bit left of my last wedge of parmesean, maybe a bit of lemon.
