What's for Dinner, Wed., April 29, 2020

Ground beef patty topped with a sauce the RG made: olive oil, shallots, garlic, tomato paste (Altamonte--not just any tomato paste, as he says). For a side, we had the vegetable pie he made a couple days ago.

I made a salad with fennel, oranges, apples, and Boston lettuce. The RG made the dressing, which was olive oil, mustard, and lemon juice. I took a photo but it hasn't shown up on iCloud yet, so maybe I'll be back later and post it.

Dessert. No freaking dessert in the house. I put some butter out, though, to make macadamia-white chocolate cookies later.

4. Mexican-style fried rice

Rice is made with 1 packet of Goya seasoning mix. I have a boneless pork chop that I cut into cubes and seasoned. Stri-fry the pork, then in the same skillet cook some diced serano pepper, garlic, onion, sliced tomato. Add the rice to the skillet, stir the pork back in and let it fry a bit while I make an over-easy egg.

I put the egg on the rice, and top it all with chopped fresh cilantro and a sliced green onion.

Had planned on stuffed chicken breasts with various fresh vegetables. Major thunderstorms and wind, no power for last 90 minutes. Another line of storms approaching. No idea about Plan B. Will be getting late to start the chicken.

Been almost continuous sirens. Probably lots of down power lines, a few fires from all the lightning.

Cellular data is working again. Might have to drink dinner.

Too late to really cook. Just a bit of salad and reheat some leftover pizza in the freezer.

gluten free chocolate cake-similar to a wacky cake and I served it with whipped cream.
