I made ricotta cheese in my InstantPot today. Came out pretty well, but after separating it I have about a quart of whey. Any suggestion as to what to do with it?

You'll also need some curds.

That's the simplest solution. It has protein, electrolytes, and probiotics, so it's quite nutritious. If you don't like drinking it straight blend it with frozen fruit and make a smoothie. You can also make fermented lemonade with it or use it to marinade meats.

When I made ricotta a few years ago the bread made afterwards was a big hit - as was the lasagna I used the ricotta for!
