The Landlady(!) had to travel for business so I'm solo in the Catskills.

A boneless chicken breast is marinating in olive oil, red wine, garlic, rosemary and thyme along with large slices of onion, red & green peppers and a few mushrooms. These'll make a nice kabob.

I don't want to bother with rice but I have some left-over mashed potatoes. A spinach salad will round out the meal.

After two and a half months of being together almost non-stop, it's weird to be alone and making meals for one.

all kinds of leftovers in the house--from pasta, to meatloaf to pot roast.

Back to cooking tomorrow.



(Took the dogs for a 3 mile walk today. I think I deserve to put my feet up.)

I bought two small turkeys back at Christmas time and finally got around to thawing and cooking the second one.

So I'll be happily eating turkey leftovers for the next few days. I'll also freeze about half of the meat to use later. I'm thinking turkey pot pie, turkey tetrazzini, turkey soup. Looking forward to all of it.

People don't fix it often enough. A lot of people only do it once a year for Thanksgiving, and so they associate it with an unnecessarily over-complicated meal.

Back when my sons were growing up, I would make a turkey every couple of months. In the middle of the week they'd come home from school to turkey dinner. Yes, yum.

various veggies over ravioli .. will make enough for 2 ...
1 for me tonite, 1 for the me i will be tomorrow lunch ..

with garlic. You use chipolata canned peppers, and cream and shrimp (I used dairy free half and half). I baked the grit cakes and made them gluten free...it came out great.
