What's for Dinner, Fri., May 15, 2020

Chicken breasts (cut in one-inch cubes) in cilantro cream sauce over pasta. I cut a bunch of cilantro from the garden.

Salad is avocado and orange sections over Bibb lettuce and topped with toasted almonds. I made my favorite salad dressing for it, and here's the recipe:

Dressing:
2 tablespoons olive oil
3 tablespoons honey or agave
2 tablespoons rice wine vinegar
1 tablespoon concentrated orange juice (or any other concentrated fruit, such as apple,
1/2 teaspoon soy sauce
1/4 teaspoon freshly grated ginger or to taste
Sprinkle of salt
Mix together with wire whisk. Pour over salad.
