Homemade Cream of Mushroom Soup Recipe

It's sort of coming to the end of soup season what with all the warm weather that's allegedly coming our way, but we wanted to do this incredibly rich and delicious cream of mushroom soup recipe! We're lucky that we have access to lots of really interesting fresh mushrooms, and we use a variety of them in this soup. They all have different flavours and textures, and it makes for a more interesting and complex soup if you can mix a few different kinds. If you can't, and all you can get are just button or crimini mushrooms, it still comes out delicious, but the trick is to get some good colour on them before they are added to your soup!

The herb mix can easily be customized based on your tastes. I think I said oregano in the video (incorrectly), but the typical mix is thyme, tarragon, and maybe some marjoram or savoury.

At least in a lot of French cuisine. Just a little splash of cognac to deglaze after browning mushrooms. Adds a lovely flavour. One of those little tiny magical restaurant secrets.
