The Landlady(!) brought back a couple of dozen oysters from the Outer Banks and we're frying some of them up as an appetizer.

Combine flour, salt and black pepper in a bowl. Dredge the oysters in the flour mixture then dip in raw scrambled eggs and roll in flavored bread crumbs. Fry in hot vegetable oil, turning the oysters frequently. It'll take 2-3 minutes to turn them golden brown then drain them on paper towels. This easy technique is also great for shrimp and scallops.

The boneless chicken breast slices are marinating in olive oil, Balsamic vinegar and garlic. We'll grill those and serve on Romaine lettuce with red onion, cherry tomatoes, slices of green pepper and some Texas Toast croutons. Caesar dressing to top it off. We also have the last of a loaf of bread we baked the other day.

Brandy and chocolate for dessert.

Mine was more spicy though. Mashed potatoes and gravy, green beans, choc icecream. It was a long and busy day.
