Chicken cutlets with herbs and parmesan cheese in the breading.
Potato salad made with fennel. Onion, pickles, mustard, mayo, crema Mexicana.
Dessert: Swiss almond ice cream and tea biscuits with hazelnut cream spread.

(22,031 posts)I have two small but beautiful tuna steaks marinating in a Thai sweet ginger sauce. I'm going to grill them back & blue.
These'll be accompanied by pad Thai noodles with bean sprouts, shredded carrots, little pieces of green pepper, minced green onions and garlic, of course. I'll use more of the ginger sauce for the mix. I'll scramble up an egg to add to the stir fry at the end. It'll all be topped off with chopped peanuts with lime slices on the side.
The store had coconut milk so I'll make up some adult beverage for dessert.
Hey, NJCher! Now that I've got my kitchen mojo back I can tell you that last night I had a peanut butter & strawberry jelly sandwich! How was the pork loin? Your salad made my mouth water.

(662 posts)Bell Pepper, Onion and Garlic sauteed with Chili Powder, Cumin and Cayenne then mixed with Black Beans, Corn and Tomato Sauce.
Layer of Corn Tortillas, then the Bean Mixture, then Cottage Cheese, then Shredded Cheese. Repeat.
Bake until all melty.
