What's for Dinner, Mon., June 15, 2020

Roasted pork loin with caramelized onions on the top. Gravy.

Mashed potatoes.

Coleslaw made with red and green cabbage. Dressing has mayo, capers.

Dessert: ice cream cone.

1. We're just going to have a pizza tonight

a frozen cheese pizza that I'll doctor up w/ onions, peppers, garlic and probably some ham. Maybe some extra cheese.


I probably should save it for when I've had a busier day, but I just didn't plan very well.


There's a few chocolate chip cookies left. Not many. Those went quickly.

2. Meatless Monday

Bean, rice corn burrito, salsa
New brand of mint tea.

Popcorn with the DVD later tonight

3. I made a tuna pasta salad

Used whole grain pasta and added low fat yogurt to reduce the mayo. Marinaded the veg in lemon juice and salt before adding to the salad. Not bad and a little healthier than the traditional method.

4. Ravioli Stroganoff

I chopped up a few mushrooms, and minced a couple cloves of garlic and added that also. It's not as richly satisfying as beef stroganoff, but when time is short this is a good quick dinner
