What's for Dinner, Sat., July 18, 2020

We're having a special dinner tonight because the RG and I knocked off work on our house. In ordinary times we'd call a contractor, but Covid. The RG waterproofed the basement. Then we cleaned the gutters on the house (didn't really need it because of the filters, but it looks nicer now on the outside), and he also installed piping and ducting away from two separate areas of the house. This involved digging trenches and lining with pipes and chipped stone. Lots of work, but all done now! Mostly I did things like go to buy supplies but I did help with a telescoping ladder, which I thought was heavy and awkward. We had a flooded basement from the tropical storm last week, thus the need to do this.

Tonight we are treating ourselves to two different types of seafood: yellowfin tuna and Chilean sea bass. The yellowfin has a sauce with capers in it. In addition, clams in broth.

Roasted potatoes.

Cucumber salad in sour cream with red onion and dill.

Tossed green salad with red pepper, red onion, carrots, tomatoes, and celery.

Dessert is Bing cherries, halved, in mascarpone and served over shortbread cookies.

Iced tea for me.

And after that, a night of relaxation and NO WORK.

I'm putting the shredded chicken from yesterday BBQ on top of red leaf lettuce, cukes, onion, tomatoes, yellow bell pepper.

Lots of cold decafe tea

... elderly dog was sick last night and we were up with her. 😢 She’s ok. Just failing quickly. So I’m not cooking.

Ordered the family meal from Fuzzy’s Taco Shop. It’s supposed to feed 4-6 but our family of four barely put a dent in it. We’ll have leftovers for a couple of days and I froze the spicy pulled pork for a taco soup in a week or two.

I may have eaten all of the guacamole by myself...

salad with beets, olives and pecans. Yellow squash, zucchini and fresh corn. Italian wheat bread. Fruit smoothie for dessert.
