Years ago, while traveling, I picked up a recipe similar to this (maybe in airline magazine,) and made it several times. Yesterday (Sunday), neighbor brought me 3 garden-fresh cucumbers (PLUS container of cherry tomatoes, 3 beautiful maybe heirloom tomatoes, and a melon - looks like small cantaloupe,) so will make cukes with dill soon, to accompany whatever else is around; maybe tomato sandwich! THANKS to great neighbors (also landlord!)

I love cuke salads.
here is one you can use your cherry tomatoes with -
cut (2?) cukes into chunks about the size of your cherry tomatoes (or half size and also cut the tomatoes in half)
equal parts tomatoes
add some chopped sweet onion to taste (I like a lot)
a good handful - 1/2 cup or more? of crumbled feta cheese
a pile of chopped fresh dill (dried works too)
toss with bottled Italian dressing, or make a vinaigrette, or something similar - a ceaser type is good too
salt and pepper

TRIED to get fresh dill after receiving the cukes, but none available, so got McCormick's dried.
Do have plain yogurt.
Now have 2-3 days worth of of ideas; just have to execute!
maybe some parm or other hard salty cheese, grated?

I can eat it in all kinds of things, love it with olives and good hard salami for a snack.

(130,865 posts)I used to trade sandwiches (in 4th grade???!!!) for HARD SALAMI, and when 'mature,' after law school, wrapped hard salami around sweet (red) pepper, MAYBE a good sharp cheddar on the side!
