What's for Dinner, Thurs., Aug. 20, 2020

The RG made these little pork pies. Ground pork.

Salad with baby spinach, baby arugula, iceberg for crunch, and various summer vegetables like cherry tomatoes, peppers, and cucumbers. Scallions.

Peach-blueberry dessert; has tea biscuits mixed it.

gluten free. Today I finally found a recipe that is the best I ever made...including those with gluten. It is from a book called 'The How Can It Be Gluten Free' (book one). One of the changes is to separate the eggs and beat them into stiff glossy peak adding the sugar gradually after they are foamy. I used a griddle which is better than a pan IMHO. So we also had bacon and scrambled eggs with a touch of lactose free cheese (yes I am dairy sensitive too so unfair one or the other-Gluten or Dairy!). In any case, this meal hit the spot.

Mom made it and brought me a container full because she rocks!

It’s got fennel and potatoes in it and a little cream. Chicken stock based, I think? Sounds like a weird combination of stuff, but it’s very tasty and strangely addictive.

I moved back to the area a year ago, after being away for about a decade. It’s so good to see and spend time with my parents. Mom came over this morning to visit with my cats and bring me snacks. I’m so lucky to have this time with her, and my Dad when he comes over to putter around my house, fixing stuff. Very blessed.
