But I found out how to stretch that to at least 5!
To freeze corn on the cob you're supposed to blanch it to stop the sugar to starch process. Once it's frozen and thawed it's still sweet but loses that crunch because ice crystals break all the cell walls. It occurred to me a similar process could prepare it for a stay in the fridge.
I microwaved two ears for 5 minutes in the husk (for me 3 minutes is ideal for serving). Waited three days and it was sweet! Waited three more days and the second was just as good!
So those of us who cook for one can take advantage of the 5 for $1 sweet corn specials!

(14,559 posts)If serving immediately use a serrated knife to cut the big end off so that the corn is exposed, then wiggle, shake and wiggle from the small end (use a pot holder 'cause it's HOT) and all the silk stays with the husks.
