What's for Dinner, Wed., Sept. 9, 2020

Vegetable wraps with grilled veggies: red pepper, zucchini, onion, and mozzarella. I'll line the wraps with basil and lettuce leaves. I have a couple sauces to use, too. One is gorgonzola vinaigrette and the other is chipotle-mayo.

Kidney bean salad. It has diced hard boiled egg, celery, sweet pickle relish and cilantro. Light mayo dressing.

Dessert will be rice pudding with green grapes.

Switched out the ground lamb for ground beef, and switched out the mashed potatoes for tater tots. Added green beans (I'm trying to get more fiber into Al's diet). Haven't eaten yet, it's warming up in the oven.

Cherry tomatoes from the garden, dressed w/ olive oil, balsamic vinegar, and basil.

Obviously, mussels. Onions, garlic, black olives, red pepper flakes, oregano, and fettuccine.

While the dish was flavorful, I found the mussels to be rather bland. I remember a more robust "ocean" flavor as a child.
