mushrooms in chili- yeah or nay?

gonna make a big pot of black bean chicken chili today. i have a half dozen perfect shitakis.
it's tempting. what do you think?

1. Never put mushrooms in anything except ....

4. No. They'll get lost with all the spicy chili flavors.

If you eat meat, sautee them and put them on a burger or steak.

5. Seems a waste to me, I love shiitakes. Maybe roast them with garlic as a side dish?

6. I used to, but no longer.

When I was a young cook, I think I put mushrooms in almost everything. Now I use a medley of beans, usually black, kidney, and pinto, and leave the mushrooms out.

You could make shiitake bacon which is a dead ringer for the real thing.

not a big bacon fan but that sounds pretty tasty.
been eating a lot of cheese. mmmm. bacon grilled cheese sandwiches.

been meaning to fire up the smoker. next flush....

didnt pick till second day, so they are nice and firm.
would sauté them up w the chicken. should be almost crispy.

14. I think the flavor would be completely lost

so it would be a waste of good mushrooms, just odd little bits of weird, rubbery texture in the chili and nothing else.

I think they're best on their own, sauteed in butter, seasoned with nutmeg, and eaten on toast.

and my kind of cooking.

havent been out yet today, but should have a flush of wine caps today, too.
a pleasant surprise they were. had them 5 yrs ago, then they didnt come back. but they popped up about 10' away this fall. had 4 flushes so far. had a good rain last night, and i watered them yesterday. so hoping.

17. yeah, will throw in a trinidad scorpion or 2.

 

bout the only peppers i got this year. those and some thai dragons.
such a tough year in the garden.

have a boodle of dehydrated ones in the freezer, tho. sweet and hot. and maters.
i love my dehydrator.

have some anchos in the freezer that i need to get on the smoker.
honestly it's the protein. been sick, lost a ton of weight. cant afford to lose any more muscle mass. i'm already skinny. and lazy.

20. I'm a mushroom kinda guy. It lends to the umami in the pot. I then use less meat.
