Is it the dairy or lactose that bothers you? If you can tolerate lactose, i would suggest either Demsrule86 Oct 2020 #11

None of it will hurt you, so just make the soup and see what happens.

Turned out to be as silky smooth as dairy. The plant-based people use raw cashews soaked, then blended smooth in their creamy salad dressings as well.

It tasted fine but the mouth feel was not great.

I imagine using a better "mashed potato" type of potato would help.

The small red potatoes I used turned out grainy without some milk and sour cream to beat them into submission, maybe a waxier potato would be better.

ETA- I just remembered that I also also used canola to fry up the leeks - Butter or lard would definitely help with the mouth feel as well.

lactose free milk or lactose free half and half which is available at whole foods. I tried non-dairy milk and other than coconut milk for Thai pumpkin soup and certain Thai dishes, I found it vile. I am lactose and gluten intolerant.
