What's for Dinner, Wed., Oct. 7, 2020

Smoky ham and corn salad.

Cherry tomato and mozzarella salad with basil and olive oil vinaigrette.

Tossed green salad with radicchio. Poppyseed dressing.

Green beans from the garden.

Zucchini seafood frittata.

For dessert, chocolate cookie bits with frozen espresso bar.

carrots, peppers, plum tomatoes, over rice.
Garden salad with blue cheese and blueberries.
maple yogurt w/ cashews and honeycrisp apple bites
Chinese tea.

5. Falafels

Since we've been living in the Catskills for 7 months, there are some NYC foods I miss. I love street food, especially falafels if they're made right.

Grind up a bunch of chickpeas and add some olive oil and a dash or two of cumin. Make the mash into small patties, kind of the size of a regular McDonalds hamburger. Lightly fry the patties till they're golden brown. Toast some pita bread and smear it with plain yogurt. Then add a bed of shredded lettuce, sliced onions, thinly sliced tomatoes and a splash of your favorite hot pepper sauce.

A simple meal on a plate.
