What's for Dinner, Thurs., Oct. 8, 2020

Pork roast with wild mushrooms and mushroom sauce. Mixed vegetable medley.

Panko-crusted Mexican squash

Tossed green salad with red and yellow beets.

Raspberry-ginger kombucha.

Dessert: Swiss vanilla ice cream for the RG, chocolate cookies and espresso bar for me.

1. Mushrooms and whole wheat angel hair

One of my neighbors gave me some fresh mushrooms. Lion's mane, oyster and a 3rd (brown small-cap long stem that I forgot the name of).

I looked online, and decided to go with just sauteing them in butter & olive oil with minced shallot and garlic, and make some whole-wheat pasta for a meat-free dinner

with BBQ sauce on slider rolls - baked it around 4 hours in a slow oven.
baked butternut squash

perhaps some fruit or salad later on.

FLFC had some dog food (!), beef, chicken and today's pork without sauce. He then declined a fake bacon treat, belched and went for a nap. He seems more recovered today from his Tuesday of diagnostics at the Vet Hospital.

3. Light barbecue

Grilled boneless pork chops with a Cajun dry rub.

Fresh garden salad of red leaf lettuce, beefsteak tomatoes, green beans and raisins with a honey mustard dressing. We'll probably add some red onion. We're getting to the end of the Landlady(!)'s garden/greenhouse season, sad to say.

Sweet potato fries, thinly sliced and fried in Grandpa's huge cast-iron skillet.

Sliced peaches for dessert.

Cold decafe tea.

Shaw, one of my cats wanted a sniff of the jarred kim chi. She had watched me take it and the egg out of the fridge, she kept tapping my leg, so I let her sniff the egg...meh..then I opened the jar...big eyes, crinkled nose and flounce off.

She is sitting with her back to me now.

Flank steak, yellow onion, red bell pepper, scallions (white), garlic, celery, portabella mushrooms and a spicy Szechuan sauce topped with celery leaves, toasted sesame seeds and scallions (green) all over rice.

Chocolate chip cookies for dessert (I haven't made them yet!!)
