What's for Dinner, Sun., Oct. 11, 2020

Barbecue pork sandwiches and cannellinis. Also pork sausage.

Grilled romaine with blue cheese.

Shortbread cookies with ice cream or with vanilla pudding.

Hot apple cider to go with dessert.

Prego Marsala Sauce mixed with canned sliced mushrooms (drained) and breast portion of Fred Meyer Savory Cooked Whole Chicken.

3. Cajun dinner

Panfried catfish seasoned with Cajun spices, topped with thin slices of scallions. Lemon wedges and Louisiana hot sauce on the side.

Fresh baked cornbread with butter.

White rice with peas and thin slices of fried onions.

Steamed broccoli with slices of tomato.

Ice cold beer.

Chocolate chip cookies.

TJ made a potato soup. Leftover baked potato and some canned potatoes. Need to use up older canned stuff in the pantry. Milk, broth, and seasonings. Nice on a cool rainy day.

FLFC is tired and only ate a little. I think he stayed up most of the night watching the door waiting on TJ to return from work this morning. They have both hit the sack again.

Scrambled eggs with a bunch of veg, black beans, and cheese in them. Sliced tomatoes from my plants, Sister Schubert roll with butter and orange marmalade.

Sunday dinner. Though when I was growing up, we had Sunday dinner as the mid-day meal. Anyway...

ROASTED CHICKEN!!!! (My favorite). The bird has been marinating since noon yesterday in olive oil, garlic, onions, bell pepper and rosemary. When I put the bird in the oven I took all those peppers, onion and garlic and put them in the cavity.

Sweet potatoes. Steamed green beans. Cherry tomatoes, halved and dressed w/ olive oil, balsamic vinegar and basil.

Dessert is homemade carrot cake.

dessert yet, but we do have some dark chocolate covered cranberries so I might have some of those later.
