What's for Dinner, Fri., Oct. 16, 2020

Roasted lamb and potatoes for the RG. I'm "lambed out" so will have a meatloaf sandwich on Brioche with red onion.

Salad with mustard greens from the garden. Also some romaine I bought at the store. Cucumber, red onion, green pepper, celery. I also added chopped apple.

Dessert is a problem. I made something and it didn't turn out. So far I have had about 40" worth of advice on how I should never use Splenda (trying to cut down on sugar!). I think I can rescue it, but not tonight. So no dessert tonight.

I learned this recipe when I was an exchange student in Mexico City many many years ago.

It's adapted a bit over the years but it's a meal even all the kids love to eat.

About a 4lb boneless pork shoulder cut into large chunks. Remove big chunks of fat but leave quite a bit on.

Mix together 2tsp smoked paprika, 1tsp salt, 2tsp pepper, 2tsp garlic powder and coat the pork with it. I let it sit until I prep the rest of the ingredients.

Chop one large onion and crush up 2 cloves of garlic. I like garlic ymmv.

Mix together 1 cup chicken stock, 1 cup coke (full sugar, not diet) and 1/2 cup of fresh orange juice.

Heat a large Dutch oven with a good coating of olive oil.

Brown the pork well in small batches and set aside. Add onions to the hot pot and cook until they are almost translucent, don't let them brown. Add the garlic and cook while stirring for one minute.

Add meat back to the pot, add and mix in oregano and thyme to taste. I use fresh if I have it but don't mind using dry if it's all I've got. Add a couple of bay leaves and pour in the liquid. It should almost cover the meat, add stock if you need to.

Bring it to a boil, cover and turn down to a simmer. Stir occasionally and let it cook for 1 1/2 to 2 hours.

Remove the pork, discard the bay leaves. Pull the pork with 2 forks, toss any chunks of fat.

Bring the liquid to a boil and let it reduce a bit then add the meat back in. Continue cooking until the liquid is gone. Let the meat fry in the fat until it gets a little bit of a crust.

We eat it with warmed white corn tortillas and the usual taco fixings.

You can use a bone in pork shoulder but then I braise it in a 325 degree oven because my Dutch oven isn't big enough.

it's a kielbasa and rice dish, w/ black beans, green pepper, corn, onions, and diced tomatoes. I add a little chili powder, ground cumin and liquid smoke.

There's some plums if we want dessert.

We had orange marmalade/soy sauce with garlic Pork chops with mashed potatoes and peas and carrots. I had an orange and a brownie for dessert.

Rucola salad with small Italian tomatoes and balsamico, then linguini with pan-roasted various mushrooms, both portobello and pfefferlinge, mixed with sautéed onions and grated cheese to add as desired. Dessert was quark mixed with fresh raspberries, sliced nectarines and maple syrup.

I had leftover smoked brisket and roasted pork. Diced it up and simmered it with the usual suspects. Served it over leftover cornbread and still have leftovers to freeze!
