Beef Curry Hand Pies

I needed to use up some puff pastry, so tried these.

cooked ground beef (I used bison)
diced onion sauteed in beef fat
diced potatoes (I par-boiled)
peas
a little beef or chick stock, soy sauce, sugar and salt
generous amount of madras curry

Cut rounds out of the pastry
brush edge of bottom round with egg wash
add a scoop of filling
top with 2nd round, seal edges with a fork and brush top with egg wash

Cook at 400f for 20-30 minutes

I used a 3" cookie cutter... the recipe called for 5"

They were very cute and very tasty.

You'd need some sort of fat to sautee those onions, but really, you could put any thing you wanted in these.

Check out a recipe for Jamaican beef patties. Traditionally they go into a spiced pie crust but I roll mine in egg roll wrappers and deep fry...my little heaven with a cold beer!
