What's for Dinner, Wed., Oct. 28, 2020

Pork strips with green pepper and onion.

Corn with cilantro and something else, can't remember.

Broccoli with garlic and olive oil. Spicy.

Dessert is a miniature pecan pie with a dab of Ben and Jerry's. Decaf coffee.

Prepping a large Halloween prop takes precedence this time of year

Last night I made a new recipe - Jalapeno Popper Chicken. I was being so careful with the fresh jalapenos, they ended up barely having any flavor. Had to add extra.

3. Beef stew

They marked down some of the stew beef even more at the butcher so it's beef stew again.

Roux based with potatoes, carrots, onion, celery, green beans (frozen from the garden) and Lima beans from frozen. Much more veggies vs. meat this time.

I also bought some whole wheat English muffins baked locally. Heavy and hearty, they were toasted and buttered and went well with the stew.

FLFC enjoyed the stew beef that was melt in your mouth tender. We went for short walk after and the little guy outpaced this creaky old man.
