What's for Dinner, Wed., Nov. 4, 2020

Seafood tonight: flounder filets and shrimp.

Butter noodles with parsley and black pepper.

I made "Herb Salad" from a cookbook I checked out from the library called At Dinner by Molly Stevens. The idea is to chop up lots of herbs and mix with baby spinach and baby arugula. It's then served over roasted eggplant and tomatoes.

The RG, however, got the idea to roll the eggplant and tomatoes into little balls and mix them in the salad. Served it with vinaigrette which I made with lemon juice and olive oil, chopped shallot.

For dessert we're having a little vanilla Swiss almond ice cream and some shortbread cookies. Decaf tea.

Earlier had a very yummy white pizza slice and Sicilian slice.

Then (new to me) Hagan das Spirits - vanilla ice cream w chocolate truffles, and Bourbon. Oooh, yum!

Now I'm going to have whole wheat Triscuts w basil & tomato and cream cheese. And some of a (new to me) dark chocolate bar with potato chip bits! 😁

Hopefully by dec I'll get back into cooking again. From late '70's through '80's+ I was a good cook.
