This was something that was ALWAYS on the table at any dinner for hiolidays since I can remember...just like the jello mold and canned cranberries... very 50s throwback.
Stuffed celery sticks... sounds basic but wait till you see what's in it!
I think it came from one of those crazy southern church cookbooks where everyone throws in something. My Great Aunt Effie and Mon's Cousin Mary Elizabeth came from vicksburg and were very active in the Methodist Church back there. I even have a copy of a cookbook from their church, sent to me for C-mas about 2 decades ago lol This year, my 18 yr old daughter will be in charge of the recipe, passing it on! (it's one of her faves, so it's time to pass the torch)
OK so here's the list of ingredients...I have NO idea what the actual measuerments would be, I just know it is supposed to have a creamy, sorta chunky consistency... I guess it is something you have to play with
start with 1 block softened cream cheese
add mayo... a few TBS at first more to taste and consistency
maybe like 3 TBS of crushed pineapple and some of the juice
Garlic salt
finely grated/crushed raw walnuts
My mom always sprinkled some red paprika on top to make it look festive, but even she was not fond of the taste ...lol

It was dusted with something, perhaps nutmeg or cinnamon. It has been more 60 years ...

(4,542 posts)and it didn't have mayo or garlic salt or nuts. They called it Pineapple Cream Cheese Pie. I will look for the recipe and post it. I modified it by adding coconut and rum flavoring and called it Pina Colada Pie. I will post that recipe, too.

(46,166 posts)The garlic is the wild card pared with pineapple. But this is how you learn what things really do go together.
We'd just have plain cream cheese sprinkled with paprika in celery sticks. But I think I'll go for your family combo any day.
