Chicken Tortilla Soup?

It's my favorite but I've never made it.
Going to make it this weekend.

Any fabulous recipes, tips, or additions to share?? Will start with an organic rotisserie chicken.

I love the creaminess the avacado brings! Yum! 👅

I start with 5 chicken bouillon cubes and 6 cups of water in a pot.

Add the equivalent of two cooked chicken breasts (sometimes from a rotisserie), chunked or shredded
a diced onion
a 16 oz can of chopped tomatoes
a generous cup of green salsa from a jar
cup and a half of frozen corn
tablespoon and a half of ground cumin

Here is the important part: when the soup is bubbling, I add in a handful of cornmeal and stir..........and when it's close to serving time, I tear up two corn tortillas and drop them in. They get soft and dumpling like.

Serve with sour cream, sliced avocado, and either home-fried tortilla strips or tortilla chips from a bag. Lime can be a nice addition, too.

I could be forgetting an item; it's midnight here.

P.S. I also like to drop in my garden-grown little yellow and green pear tomatoes, whole, that I freeze in the summer months. Very festive.

long before it became popular here - no chicken because this was more of a peasant food but obviously fine to add it.

Tortilla Soup - serves 4

1 chopped onion
1 chopped tomato
1 chopped bell pepper
2 T chopped parsley (or cilantro)
1 small can tomato sauce
2 cans (15 oz) chicken broth + one cup water and bullion
1/4 t thyme
1/2 t salt
dash pepper or Tabasco
1 c grated jack cheese (or queso fresco)
tortiila chips/strips (best if fresh fried - cut a half dozen corn tortillas into strips and fry in your choice of fat)
optional: dried red chile cut in small strips

saute onion and pepper in a little oil 5 min. stir in parsley and tomato. add remaining ingredients except chees, chips, and chile strips. bring to boil, then simmer 5 minutes. serve - add chips, cheese and chile as desired.

I have taken dried versions of ingredients camping and only needing the cheese to keep cool - fast delicious camp soup!
