and rice with a little cucumber salad on the side. I cut up a glorious pineapple day before yesterday and will find the energy to make a pineapple upside down cake that I plan to customize with coconut flourishes. I'm going for an upside down Pina Colada Cake -- will let you know if it turns out.

oven fries, broccoli and a birthday rhubarb pie to celebrate my younger son's birthday today. The pie is very well browned, but not burned, and smells like it will be very good. My son has always preferred tart things, and when your birthday is May 5, that means rhubarb pie.

i'll probably just season the whole lot of it and toss it in the oven, that is about as much work as i feel like doing for dinner. and i'm going to make the husband prep all the veggies.

11. Broiled swordfish

I made basil pesto and topped the swordfish with it. It was out of this world.

I also stuffed some potatoes. I minced a little onion, a fresh mushroom, some rosemary, and a little bit of the potato together and added a little creme Mexicana. Then I put this in the hollowed out potato. Was it ever good!

Also a salad with Japanese ginger dressing.

I used a peppercorn and garlic rub on them, wrapped them in foil and marinated them in the fridge all day. We also had baked potatoes with freshly snipped chives and and a lettuce and tomato salad on the side. We don't have steaks very often but today was DH's 69th birthday so a splurge was in order.
