What's for Dinner, Thurs., Dec. 24, 2020

Appetizer is salmon, cream cheese, capers, and red onion on pumpkernickel.

Next up is ground pork on Brioche rolls with sauce the RG made. Has lettuce, onion, tomato.

Baby broccoli, steamed.

Golden beet salad that I made with my spiralizer. Has basil, goat cheese, olive oil, and chopped walnuts.



Dessert: chocolate bar and a few cookies.

3. Our family's traditional Christmas Eve dinner.

Red, green and white spaghetti.

Standard red spaghetti sauce.

Loose sausage slowly rendered, fat discarded. Heavy cream added and reduced to a thick sauce.

Pesto from our garden.

Iceberg lettuce salad (the only time of the year we use iceberg) with tomatoes, cucumbers, avocadoes and croutons. Ken's Steakhouse Italian dressing (again, the only time of the year for that.)

and more turkey because the grocer substituted a 20 pound bird for the 12-14 pound I ordered.

Stuffing, baked beans, green beans, mashed potatoes and gravy.

We put together a massive plate for our non-cooking neighbor (FLFC's best buddy) and dropped it off on his porch. We feed him from time to time. Usually ribs, ham or turkey.

FLFC supervised and then started barking demanding some. I gave him a de-boned neck which he tasted and declined. Some skin, wing meat, and breast were eaten. He tasted everything but had little comment. I guess turkey is only two paws up today.

The Landlady(!) had to check on her property in the Outer Banks and brought back a bunch of fresh seafood. Tonight will be a collection of yummies.

Escargot Bourguignon served in scooped-out small red potatoes
Oysters Casino with Bacon on the half shell with lemon
Stuffed Clams with cocktail sauce
Large mixed green salad with oil and vinegar
Chardonay

Incredibly, her parsley plants still had enough growth on them (in the greenhouse) so we have fresh parsley on December 24th!
