went with
New York Strip Roast with potato, pepper and carrots roasting in the pan with it, green beans, and a Greekish Salad (iceberg, tomato, cucumber, diced onion, black olive and fetta)

Strip roast was on sale at the local giant. Hamburger, $3.49. strip roast, $4.29. Can’t believe how inexpensive it was, we were going to go leg of lamb but the roast was too good a bargain to pass on.

Followed the reverse-sear method. Was delicious and tender, came out too well-done for DH but fine for me. Sometimes this cut is really inexpensive and it’s almost as good as prime rib.

It’s resting right now, so I’m not sure how it is. It smells good anyway.

Was overcooked but tasted delicious.

Wanted a prime "small end" boneless but they delivered "large end" bone in . Bit too fatty. Made gravy taste different. But overall good!

I like medium with just a little pink. The “end” slice that I had on Christmas Day was good. The middle slice that I had yesterday was quite rare, so I put it in a 250 degree oven until heated through and it was perfect and tender. I’m thinking that the last slice may get too well done tonight, so I’m prepared to slice it up for French dip sandwich’s.

My wife makes the best apple sauce. Lots of cinnamon and a little sugar McIntosh apples and a couple Granny Smiths. I love it.

... meal tomorrow. Too stuffed with breakfast and cheese and crackers. Since there were no guests we could continue the minimalistic approach launched by not being able to find a tree! Lovely no work day.

It's a good thing there were no guests, because an hour or so after I'd removed the fat from the lamb shanks and added the half cooked beans, I found I'd forgotten to put the casserole back in the oven!!

With fewer people this year, just us and my daughter and her family who I see every day. My brother and niece aren’t traveling, told them we’d have Christmas in July, hopefully. Son and wife in Florida aren’t traveling either.
Spiral ham, hash brown casserole, green bean casserole, mixed veggies, coleslaw, rolls. (This gourmet meal calls for 2 cans of cream of celery soup!). For dessert, cookies and chocolate cream pie.

Ground turkey and sausage meatloaf, with various roasted veges (potatoes, carrots, onions, celery, yellow squash, with a little balsamic vinegar and olive oil). Probably biscuits. Still plenty of xmas cookies.

We seared a couple of rib steaks we’d cooked sous vide for three hours at 135. Salad on the side. Overall, a pretty simple dinner. Clementines for dessert later.

so no goose and spätzle this year
But, dinner was excellent!

Smoked ham, scalloped potatoes, asparagus, red beets and pickled eggs, homemade sweet rolls, and champagne (I only had half a glass for toasting then switched to coke).

Working on a coffee now, waiting until I have room available for cookies.

Merry Christmas!
