What's for Dinner, Sat., Dec. 26, 2020

Vegetable salad with lentils, which the RG made. One of the best salads I've ever had. The perfect touch was the cider vinegar. The veggies were chopped carrots, celery, onion, a little red pepper. Oh, and bits of avocado. So happy there is enough that there will be leftovers.

Ground pork burgers on Brioche rolls. Topped with French cheese made in the Pyrenees; also some hard cheese from Spain that I can't recall the name. In addition, sliced red onion and mayonnaise sauce with herbs.

Cabbage roll stuffed with mushrooms and sauce.

For dessert, decaf coffee and espresso cookies, fig-filled sandwich cookies we made ourselves using fig preserves made in Uruguay (los nietitos) but actually imported by some company in the town next to us. In addition, a friend dropped off some mini-cupcakes: cookies and cream frosting.

Later tonight, if we want a snack, we also made guacamole and salsa with mango.

1. Maybe this -CREAMY COCONUT, CHICKPEA & POTATO CURRY

found on Reddit forum, vegan for beginners
Ingredients
Serves 4
- 1 medium onion, diced
- 3 tsp garlic granules
- 1 & 1/2 tsp ground ginger
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp dried chilli flakes
- 1 tsp of turmeric
- 1/4 tsp ground cinnamon
- 1/4 tsp nutmeg
- 650g baby potatoes, halved
- 1 large carrot, sliced
- 500ml veggie stock
- 1 can of chickpeas, drained & rinsed
- 1/2 can full fat coconut milk
- salt & pepper to taste

Cook onion in a large saucepan or pot using a little olive oil (or water for oil free) on a medium heat setting for 8 mins until soft and translucent.

Add in all the spices including the garlic granules and cook for 1 minute until fragrant.

Add in the potatoes & carrot & chickpeas, then pour in the veg stock.

Bring it all to boil, give it a good stir, cover then leave to simmer on a lower heat setting for 15-20 mins until potatoes are soft enough to poke a fork through without breaking them apart.

When the potatoes are soft, pour in the coconut milk, cook for a further 15 mins with the lid off until the liquid has reduced a little.

Taste and season with your desired amount of salt and pepper.

Serve with rice and enjoy!!

This has been such a strange holiday season, just as has been the last three-quarters of the year. We miss gathering with our friends and families and enjoying our traditions. This year, Christmas has been limited to the Landlady(!), my son and me.

Here's tonight's plan:

Appetizer Platter
Carrot slices
Cucumber spears
Slices of red, green and yellow bell peppers
Homemade Ranch sauce

Salad
Chopped Romaine lettuce
Cherry tomatoes, halved
Red onion, minced
Dill weed (dried) shaken on top
Very light honey mustard dressing

Entree
Glazed Christmas ham, thinly sliced topped with small pieces of Brie cheese
Twice baked potatoes halves
A very light local white wine (Catskills Mountains)

Dessert
Lemon sorbet with ginger snaps
Brandy (optional)

... we were so stuffed with breakfast and hors d'ouvres. There are up sides to not being able to have the family in for the festival.

Lamb shanks with white beans.
Broiled skinny asparagus
Maque choux (corn, red pepper, jalapeno pepper and canned diced tomato.)

Before Covid, we used to go to a restaurant that had lamb shanks as an entree, at least in the winter. They are so hearty. Perfect wintr food.

White beans (cannellinis?) would be a good accompaniment.

Angus beef roast with sweet onions, celery sticks, carrots and potatoes. The entire house smells fantastic. ❤
