We almost always use day-old rice (I cook extra the day before). It seems to work better - not so sticky.
Used some carrot, egg, finely chopped broccoli, bacon, and Chinese sausage. It's a super-easy and fast dish. The longest amount of time is spent cutting everything, like most stir-fry types of dish.
It made for a great lunch before I started prepping our Xmas roast duck for dinner.
