What's for Dinner, Sun., Dec. 27, 2020

Stuffed peppers and zucchinis. This stuffed pepper is served with a tortilla shell on the bottom, the pepper in the center, and sauce spooned over it. It's topped with a slice of tomato.



In addition, Italian broad beans with onion and pancetta.

I made the salad, which was sliced carrots, mandarins, raisins soaked in apple cider, thinly sliced red onion. Boston leaf lettuce. Dressing is cider vinegar, olive oil, and a little of the cider.

For dessert, flan. Cookies with fig preserve and brandy butter hard sauce. Coffee.

On both! My fav food is homemade tamale. Don’t get em often enough.

I felt bipolar watching that game! Jeez! Roller coaster!

whatever spices I feel like at that point, then cover and simmer for 15 or 20 minutes. I usually don't cook my vegetables for as long as many southerners do, unless I am cooking for someone who prefers that.

... no cal dressing instead of the stuff in the package. Tonight we'll have shrimp on top. Have to use up the bag left over from Christmas hors d'ouvres. Also avocado and Campari tomatoes in the salad.

The Landlady(!) took the bone from our Christmas ham threw it in the crockpot along with a 15-bean mixture, spices, etc. It's been slow cooking for over 24 hours and smells delicious. We're making cornbread sticks again and I'll probably ly throw together a green salad.

Chocolate ice cream for dessert.
