Mexican calzone; an invention of the RG's. It is actually quite good. He used ground beef/pork that had taco mixture on it and made a calzone shell out of Pillsbury crescent rolls. Over it was crema Mexicana and chopped cilantro.
To go with it, I made a southwestern type salad. Avocado, corn, scallion, chopped zucchini, diced red bell pepper, and cilantro. Also goat cheese. This is mixed with greens (recipe specified romaine, but I chose spring mix). The dressing is avocado oil, lime juice, and seasonings.
For dessert, we're having mango mochis. Orange tea.

FLFC is in bed, he had a good day, two front yard outside(!)s and one backyard visit to a neighbor. He went into the neighbor's place which is where we lived for a year or so after we adopted him. I think he remembered it from seven years ago.
I'm sure he will be eating once TJ gets up for work in about two hours. I'm hoping he will like dog food and part of a hamburger, followed by apple slices. With him there is just no knowing what he will eat. I know that the salmon is not to his liking.

(22,634 posts)In a casserole layer flounder fillets, thickly sliced fresh tomatoes and season with salt, lemon zest, lemon pepper and about three tablespoons of lemon juice. Cover and cook for about 45 minutes to an hour at 350° checking at about 30 minutes to rotate the position of the dish. Served with a side of mashed potatoes and carrot cake for dessert.

(35,660 posts)He's the "resident gourmand" because he lived in Europe for 20 years and attended the great cooking schools of France and Italy. He did this as a hobby; his f-t job over there was as the owner of a chain of language schools. Here in the states he is a food consultant in the specialty food field.

(5,523 posts)SO - We had boxed scalloped potato thingy with added ham pieces and frozen peas. It is actually quite good. I make it a few times each year. And baked apples (as long as the oven was on). Ice cream bar for dessert.

(10,134 posts)Cleaning out a number of small containers of leftovers, dinner was a sorta hot and sour soup. Let's see: we have one chicken drumstick, some napa cabbage, a handful of mushrooms that have seen better days, some hot chile oil from the last time we got Chinese takeout, chicken stock, rice vinegar, a few leftover tortellini (well, they're sort of like wontons). Turned out pretty good if I do say so myself.
