ground beef, onions, garlic, oatmeal and seasonings. The last 10 minutes of baking, I topped it with french-fried onions and bacon bits, served it with Chinese garlic chili sauce. I'm in heaven. Waiting for roasted Italian green beans to finish. Dinner!

(13,539 posts)eliminate the salt my usual recipe called for and ended up with salt loaf! It wasn't so bad I didn't eventually eat all of it, but pretty darn salty for someone that normally uses very little. On the next try, it turned out great.

(2,475 posts)This sounds great! I'm a masher myself... mash the meatloaf slice with whatever veggie I have and mashed potatoes into one big gloppy heap on my plate and then dig in.

(2,220 posts)Hubster makes a great meatloaf. He doesnt use onions because we usually give a little to our dog. He makes a mean glaze with chili sauce, ketchup, cinnamon and whatever else he pulls out of the cabinet.

(21,998 posts)I like to make a 3-meat meatloaf using ground beef, veal and pork. I use seasoned bread crumbs instead of oatmeal and I usually add a whipped egg to the mix. Like you, I use onions, garlic and whatever other spices or seasonings grab me in the moment. Sometimes I'll add a few shakes of hot sauce. When I'm putting the meat in the bread pan, I'll put down a half layer then put cheddar cheese in the middle then cover it with the rest of the meat. I'm not a big fan of glazes but I'll occasionally put some bacon strips on top.
Now I'm hungry!

(10,130 posts)Ideally about a third each of ground beef, pork, and lamb. Plus a mirepoix (carrots, celery, onion), egg, pepper, and enough bread crumbs to make it feel right - it ends up about 50% meat. I like the idea of the garlic chile sauce: I usually use tomato paste spread on towards the end of cooking.

(16,904 posts)I used to put ketchup on, but so many carbs. The chili sauce is very low-carb and adds color and flavor.
