What's for Dinner, Mon., Jan. 4, 2021

Korean barbeque ribs. They are slow-roasted in the oven with spicy sweet sauce the RG makes. Also has caramelized onion in it.

Mashed potatoes.

Tossed spring mix salad with shaved fennel, apple, celery, and toasted walnuts.

For dessert we split an ice cream cone with nuts on top and had some vanilla wafers with fig preserves on them.

To drink, I had a holiday edition of kombucha that I found at WF.

Porterhouse steak with sautéed mushrooms and onions.

Mashed potatoes with butter.

Mixed green salad with cherry tomatoes and red onion topped with a tangy honey mustard dressing.

A bottle of Beaujolais Nouveau.

Ginger snaps.

of Shepherd's Pie that my daughter left behind from her latest order and perhaps a salad. If DH doesn't wake up soon enough from what was supposed to be a wee shower (not a nap, but no water yet heard!) upon returning from work, this dinner will need to be re-scheduled?

with homemade Italian bread, leftover cold filet, bosc pear, and ice cream sandwich for dessert. The bread was baked with a cookie sheet in oven bottom filled with water and the crust was super crunchy. I topped the bread with sesame seeds just for fun.

... with diced ham steaks, diced cheddar, wedges of Campari tomatoes, the seeds that come in the TJ's package. I try to have this twice a week in lieu of dieting the rest of the week.

8. Meatless Monday....Thai Red Curry Tofu over rice

​Red Thai Curry Broth
1 6oz can coconut milk
1 tbsp vegan red Thai curry paste
2 tsp soy sauce
2 tsp maple syrup
1 tsp garlic chili sauce
1/2 cup water
.
Combine all ingredients in a bowl and whisk together until smooth. Add liquid to a sauce pan and bring to a simmer. Cook until heated through and remove from heat. Add cooked noodles to broth and serve topped with tofu and veggies.
I baked the tofu cubes for some texture resilience. I used a package of 'Asian Style Veggies' .

I fry hamburger, add taco seasoning or salsa, a little onion. Spoon into taco shell with shredded cheese and avocado. Toast in my toaster oven til cheese is melted. Top with fresh tomatoes, lettuce or spinach and pop into my great grandkids taco trucks (which I found at Peppercorn in Boulder.)
