What's for Dinner, Thurs., Jan. 7, 2021

Salmon salad. The greens were tossed in citrus vinaigrette. I made sour cream/creme fraiche mixed with scallion and cucumber to dip the salmon in.

The RG made Asian beef slices and potatoes for the main course. The marinade for these very thinly sliced beef slices was soy, sesame, fish sauce, a little brown sugar, and garlic.

The potatoes were sliced and cooked on the stovetop in olive oil and garlic. They came out crisp and had a nice golden brown to them.

For dessert, I toasted waffles and we had ice cream over them. Spicy tea.

For dessert: Homemade Chex Mix with lots of nuts and M&Ms, drizzled with white chocolate. One of my coworkers made a huge bag for us and it’s delicious!
