What's for Dinner, Fri., Jan. 8, 2021

Chinese tonight. Chicken with pineapple over black rice, grown in Milan. Not like wild rice, but rice that's kind of puffy and black.

Tossed green salad.

Dessert: almond cake and hot spicy Chai tea.

And chicken salad sandwiches. My youngest is off to college again tomorrow and its her favorite. Otherwise Friday is almost always pizza night.

6. Hot dogs are surprisingly versatile

When I was in college, hot dogs were one of the few meats I could afford and a girlfriend showed me dozens of ways to include them in different foods. My favorite to this day is to slice the hot dogs into bite-sized pieces then fry them in a pan with onions. When everything is cooked, mix it all into a Mac 'n' 4-cheese casserole. Yum!

Of course nothing beats the Classic: A dog in a bun with spicy brown mustard!

Kings Supermarket. Brand name is Cordero Venere Black Rice. Kings is kinda' upscale.

This dish was "invented" by the Landlady(!)'s late husband. It's basically coq au vin with a few spicy twists, (wink). It's delicious, easy to make and there are usually some leftovers as well.

Yellow rice and black beans on the side along with a simple green salad with French dressing.

Homemade chocolate chip cookies for dessert.

Rice, carrot, zucchini, broccoli, scallops, collards, spices all thrown in a pot.

Usually it is just made with green onions, dried chilis and a hoisin/oyster/soy sauce. But I add mushrooms and broccoli for a little veggie flair. Served over white rice.
