Creamy polenta with a variety of Italian hams and sausage chopped on top. Also Parmesan cheese.
Salad made with spring mix, chopped carrots, celery, golden beets, red onion, green pepper, and red radishes. I topped the salad with croutons (homemade using ciabatta rolls) and wasabi mustard microgreens:
Above are the wasabi mustard greens. They are hot, but they lose a lot of their heat once added to a dish.
I have other microgreens going but they aren't ready yet, despite the fact that I planted them way back on Dec. 12. I have beets (almost ready), curly mustard, oregano, and sunflower. I grow them in coir mats using a plastic tray. I have others growing outside--dill, for example. Kale and leek sprouts.
For dessert. blueberries served over vanilla pudding. Cookies. Sweet and spicy tea.

(22,031 posts)I love dill. Fresh is best, of course, but I'll still use the dried stuff because it has such a fresh and "sunny" flavor.
Your salad sounds delicious, if...fish...
We have some left-over sirloin steak from the other night so I've trimmed it and ground it up. The Landlady(!) made an awesome chipotle sauce over the weekend so we'll combine those with the usual lettuce, tomatoes, onions, hot sauce and sour cream. We're going to use the pre-made hard shells that are extra thick so they stand upright. I know, it's not traditional but they're convenient!
There were two avocados in the "must sell" bin that were perfectly ripe so we'll have a nice guacamole with the tacos. We always check this bin in the produce section because some of the deals are too good to pass up!
Dark chocolate for dessert.

(68,552 posts)efforts, I have Covid...not a horrible case, (no idea how I got it...was so careful) and I think I will be OK. but everything I taste has no flavor...hope that goes away!

(22,031 posts)I've been in love with food most of my life. When I went to college, I had my own apartment because my school didn't have dorms or a meal plan. All I really knew how to cook were a few dishes: Scrambled eggs, hot dog, hamburgers and tuna sandwiches! A friend gave me my first cookbook, "The Starving Artist's Cookbook" and I learned a lot of the basics. It was a pretty funny book and I still have it on our kitchen bookshelf.
My wife is a true foodie who can take a glass of ice water and turn it into a delicious meal. So, we have quite a bit of fun planning our meals and it's not unusual for us to discuss our dinner menu while we're having our morning coffee.
I'm so sorry to hear you've got Covid. It's an insidious disease and I hope your symptoms are manageable. it sucks to lose your sense of taste during the pandemic since food is one of the few joys we can still enjoy! Here's a hopeful thought. A friend who recovered from the virus had her sense of taste return and I hope the same for you.

(9,965 posts)We had ribs on Saturday so there's a lot of leftovers (just two of us here). I'll sitr-fry the pork bits stripped off from a chunk of ribs, add onions and some cabbage and carrots from a bag of cole slaw mix and then add some gochujang before adding the rice to it all and then an egg. Fried rice is spousal unit's favorite no matter what I put in it so it's a great vehicle for leftovers.
