So I planted Hyacinths in two of my three containers on my porch...

and they did beautifully, but they are on the way out, and I am wondering if I should cut them back or just let them die off. I am starting to think of what to plant in them for the summer season (I live in zone 7)

Any suggestions?

I have had hyacinths in pots and then planted them, and they come back every year, as nice as ever.

That is, unless you are in an area where no bulb plants will survive, like the deep south.

They will come up again year after year. Leave on the foliage and let it turn yellow and go dormant until Spring.

then put them in a hole about the depth of the pot. Easy, and they will keep coming back year after year.

I bought a little pot of them at the grocery store to cheer up my guest room for some visitors. When they died back, I'd meant to plant them in my flower bed but got busy and forgot about them.

When I found the sad little pot of dirt in my garage last fall, I assumed the bulbs were goners and used it to fill a hole that the dog dug in the backyard.

Lo and behold, I had a little clump of hyacinths growing there this spring. Once they have died back again, they'll be moved to a more prominent spot (though it was fun to see that little patch of unexpected cheer every time I went out the back door.)
