Barbara Kingsolver's Disappearing Zucchini-Orzo

Don't know why I didn't try this recipe when the book Animal, Vegetable, Miracle was first published, but I'm glad that I finally did. It is easy, quick, and delicious.

Disappearing Zucchini-Orzo
Ingredients

1 lb orzo pasta
3 tablespoons olive oil
1 white or yellow onion, chopped
2 cloves garlic, minced
3 large zucchini, grated
2 teaspoons fresh thyme
1 teaspoon fresh oregano, minced
1/4 cup Parmesan cheese, freshly grated
Kosher salt and freshly ground black pepper, to taste

Preparation

Bring 6 cups of water to a boil in a large pot. Add salt and orzo and cook until just tender, 8-10 minutes.
In a large skillet, heat olive oil over medium-high heat. Add onion, garlic, and zucchini and sauté until lightly golden.
Add thyme and oregano and remove from heat.
In a large bowl, toss together the orzo, zucchini mixture, and cheese and season to taste with salt and pepper. Serve chilled or room temperature. Enjoy!

ETA: I substituted basil for the thyme.

simple recipe. And it's equally good with summer squash.

3. Why is it called Disappearing?

I suppose it's that people consume it rapidly, but with that name I'm picturing that it simply fades away and disappears during the cooking process.

It does look good. I'll add it to my recipe file.

very quickly and it is a very large recipe! I usually only make 1/2 recipe for the two of us, but we could eat it nearly every day.
