♥Kimchi Pancake & Dipping Sauce Recipe♥

Hi all, Thought I would share my fave food. Kimchi pancakes, or Kimchijeon. It is a really common and popular snack/bar food, and super easy to make. Pairs great with alcohol or as a meal. Great way to use very fermented kimchi too!
If you want to be really authentic, have it with some soju as a side dish!

Ingredients for batter:

1 cup kimchi, chopped and drained
1/2 cup reserved juice from kimchi
1 cup all-purpose flour (traditionally rice flour or glutinous rice flour but honestly you're fine to use what you have)
2 eggs
1 green onion chopped
2 Tablespoon vegetable oil (I prefer sesame oil)
salt to taste

Ingredients for Dipping Sauce:

1 Tablesoon Soy Sauce
1 Tablespoon Rice Vinegar
1/2 Teaspoon sesame oil1/2 teaspoon Korean chili pepper flakes (optional- the kind used for making kimchi)
1/2 teaspoon toasted white sesame seeds (optional)

Directions:

1. Stir together the kimchi, kimchi juice, flour, eggs, and green onion in a bowl.
2. Heat vegetable or sesame oil over medium heat in a large skillet. Using about 1/4 cup of the batter for each pancake (or more depending how large you wish- I often make large ones with 1 cup)- pour into skillet, spreading as thin as possible. Cook pancakes until set and lightly browned. Turn once, 3-5 minutes per side. Season to taste with salt.
3. Dipping Sauce: whisk together the soy sauce, rice vinegar, sesame oil, chili pepper flakes, and toasted sesame seeds. Serve this with the pancakes. You can cut up the pancakes as a finger food or use chopsticks as you'd like.

A very versatile and easy to make treat!

When I was much younger I lived in downtown Los Angeles. It was very ethnically diverse and there was a Korean lady that sold jars of her homemade kimchi that came in several varieties. I liked the flavor, but I really didn't know how to use it other than as a condiment or topping. Of course I had it whenever Asian food was served, and I liked it with hotdogs and brats, or a topping for burritos and tacos.

I'm too far away for such culinary excursions now, but I sometimes eye the odd jars of kimchi that occasionally show up in my local supermarket, but I haven't bought any... yet.

You can use it for countless things, I do love fresh kimchi just plain as a side dish.
It's great for stews and I love using it to make kimchi omurice also.

It's easy to make, just a matter of time and managing the mess LOL
