Homemade Ma Po Tofu Recipe - Szechuan pork tofu

We have a friend who comes originally from Taiwan, and his parents have some great Taiwanese and Chinese dishes. We realize we're a tiny bit late for Lunar New Year, but it's still a great time for some spicy and delicious traditional Chinese dishes! This is slightly simplified, using ketchup and some pre-made chili paste and black bean sauces (actually Korean in this case!) but the end result is aromatic and delicious.

You can definitely kick up the heat on this recipe with some more spicy elements, or with a little bit of the chili oil we did a video on recently. Also, you can make a very large batch of the pork in advance and then freeze it into servings. This makes it very easy to make just enough Ma Po Tofu for a couple of people at a time, and have the cooked and seasoned pork in reserve.

Easy and Rich Bread Pudding Recipe

We had made muffalettas recently, and we had a bunch of bread that we had pulled out of the big loaf to make room for all the delicious things you stuff into a muffaletta (you can find our video on this on our channel, as well). So we decided to make bread pudding! This is adapted from Paul Prudhomme's bread pudding recipe, but we scaled a bunch of stuff back. It has a lot less sugar, and we've added rum-soaked raisins, and simplified the technique a little.

It is -very- rich. Also, in the proportions we made it, it came out very custardy in the middle, which was delicious, but I could see how it might be a textural issue for some people for it to be so soft. To be honest, we ate this the evening we made it when it was still warm but had completely set, and then we had it cold the following day, and it was much better cold the following day.

Simple Yam Curry Recipe

This is a really simple curry recipe that is vegetarian (vegan if you use vegetable oil instead of butter, and vegan coconut milk). It's very rich and hearty, bright with big spicy flavours. We mixed our own curry powder mix for this, but you can use your favourite store brand curry powder as well.

You can garnish this in lots of different ways, from crunchy toasted pepitas or sunflower seeds to feta cheese or some fried paneer. It's a really great rich and warm curry when the temperatures are dropping!

Red Hot Pears Salad Recipe

So, a few weeks ago we made those pears canned with hot cinnamon candy (we used Hot Tamales, but Red Hots is more traditional). They are delicious and bright pink! You can just eat them as they are, but we thought we'd like to put them in a recipe to give an example of how we might use them. This salad is one way to use them, and we've definitely eaten this a couple times in the last couple of weeks!

The spring mix we used isn't a particularly bitter green, so we didn't want to over-salt the salad, and we didn't want to make too tart or acidic a dressing. Everything is pretty mild in this recipe, but it has an amazing array of textures and flavours. You can also use regular canned pears or even fresh pears in this as well!

Restaurant-style Glazed Baby Carrots recipe

It's the holiday season, and we've been busy! So, we kinda phoned this one in. We've been getting these lovely produce boxes of local veggies and fruit, and one of the things we got was this bunch of lovely heirloom baby carrots, so we decided to do a restaurant-style prep of them. This is a pretty common way for restaurants to deal with large quantities of fresh produce. Basically, we just blanch and shock them, then peel them, then freeze them. We thawed them out to give them a delicious buttery glaze, and they were delicious.
