I don't know what's got the fundie panties in a wad about Catholics, either. But the Roman Catholic church is the genuine original Christian church. It's the one from which all the other denominations were spin-offs. The line of Popes goes all the way back to St. Peter, one of the 12 apostles.

Clearly, I'm glossing over the complexities of the Protestant Reformation and the splits and schisms over the centuries. But I would hazard a guess that if you and your fellow believers split away from the main line faith and started your own church, then you'd probably define a tradition that says that YOU are the real deal and the old guard is not, so perhaps that's why fundie Protestants even today will say that Catholics aren't true Christians.
