If they are bedridden, they can't get the food by themselves. Not even to go to the door to collect pizza delivery. So who is enabling the person to consume so much food?
If this were my task, I'd immediately substitute vegetables and fruits for everything they were eating. No fat, no starch. As much as they wanted, cooked or raw.
