1. It's that phrase, "... trim away defects ..." that casts a shadow on this plan . . .

Oh certainly, the USDA inspectors will "check every carcass," they just won't know what was happening with the parts that were trimmed away.

"Why's this cow missing it's left hindquarter? What happened to this beast's organs? How did this bovine make it into the stockade without legs?"

"Don't worry about those 'blemishes.' We cleaned 'em up to make your job easier. Trust us. We're professionals. We're only 'employees' on pay day."
