The "danger zone" for potentially hazardous foods (meaning anything that can make you sick if it's not kept refrigerated or heated, including meats of all kinds, dairy and eggs) is 40 degrees to 140 degrees. If you keep potentially hazardous foods between those two temperatures for more than two hours, and then you eat them, you can come down with a nasty case of food poisoning which can cause gastroenteritis - which caused the bloody diarrhea. Cooking the food won't solve the problem because the toxins are heat-resistant.
Since we're talking about a smokehouse here, it appears to me that she tried cold-smoking meat she would cook later (this is how bacon and hams are smoked) and let the temperature rise above 40 degrees. Since she has no idea about the term "process control," she didn't know her process had gone...well, out of control...and the meat needed to be discarded as hazardous.
